Durch die Kombi aus Reis, gebratenen Champignons und jeder Menge Grünzeug könnt ihr ihn als Hauptgericht essen, aber auch als Beilage verwenden. Ihr sehr … er ist ein echter „Allrounder“! Los geht´s mit dem Rezept:
Zutaten (für 4 Portionen)
200 g Basmatireis
Gemüsebrühe
1 Knoblauchzehe
200 g braune Champignons
1 Frühlingszwiebel
3 Eßl Kresse
Handvoll Petersilie
75 g Rucola
Öl zum Anbraten
Für
das Dressing:
3 Eßl weißer Balsamico
7 Eßl Olivenöl
Saft von 1 Limette
Salz, frischer Pfeffer
Anleitung
Den
Basmatireis in Gemüsebrühe kochen – leicht abkühlen lassen
Knoblauch
kleinschneiden, Champignons in Scheiben schneiden und beides in
etwas Öl knusprig anbraten – zur Seite stellen
Rucola
und Kräuter ebenfalls kleinschneiden und zur Seite stellen
Aus
den Zutaten für das Dressing eine leckere Soße mixen
Nun
alle Zutaten zusammengeben, abschmecken und lauwarm oder kalt
genießen
